This healthy salmon sheet pan dinner comes together in about 40 minutes, requires minimal clean-up, and is impressive enough for company.
Want to switch up the veggies? I like the combo of green beans and baby potatoes because they're both easy-to-find crowd pleasers. However, sweet potatoes or winter squash (cut into 1-inch chunks) would also be delicious, and you can easily swap out the green beans for broccoli florets or sliced zucchini, depending on the season.
I do recommend sticking with the salmon here, though, since it is full of nutrients and cooks perfectly alongside the potatoes and green beans.
Lemon-Dill Salmon Sheet Pan Dinner, Step by Step
Time needed: 40 minutes
Follow these easy directions, and you'll get perfectly cooked potatoes, salmon, and green beans every time.
- Season and roast the potatoes for 15 minutes.
While the oven preheats, quarter the potatoes, and assemble the other ingredients. Then, toss the potatoes with some olive oil, salt, pepper, garlic powder, and paprika and roast them for 15 minutes. (Since potatoes take longer to cook than salmon and green beans do, this head start ensures that everything is finished cooking at the same time.)
- Add the salmon and green beans to the baking sheet.
Carefully remove the baking sheet from the oven, nudge the potatoes all the way to their side, and add the salmon and green beans in columns as pictured.
- Season the salmon and green beans.
Drizzle the green beans and salmon with olive oil and lemon juice, and season with salt, pepper, garlic powder, and fresh dill. Top the salmon fillets with lemon slices.
- Roast until the salmon flakes easily and the potatoes are tender.
Put the baking sheet back in the oven. Roast for about 15 more minutes, just until the salmon flakes easily with a fork and the potatoes are tender all the way through. (The green beans will be browned on the outside but still crunchy.)
- Enjoy!

Salmon Sheet Pan Dinner with Green Beans and Baby Potatoes
Equipment
- Large rimmed baking sheet
Ingredients
- 1 pound (or up to 1½ pounds) baby potatoes, quartered
- 3 tablespoons extra-virgin olive oil, divided
- 2 teaspoons kosher salt, divided
- 1 teaspoon garlic powder, divided
- 1 teaspoon paprika
- Freshly ground black pepper
- 1 pound green beans, trimmed
- 4 fillets skin-on salmon (6 to 8 ounces each)
- Juice of 1 lemon
- 1 lemon, thinly sliced
- 2 tablespoons finely chopped fresh dill
Instructions
- Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper.
- Put the potatoes in a large bowl, add 2 tablespoons olive oil, 1 teaspoon salt, the garlic powder, paprika, and a few grinds of black pepper. Toss well until the potatoes are evenly coated with oil and seasonings.
- Dump the seasoned potatoes onto the prepared baking sheet and push them to one side, making sure they are in a single layer. Place the baking sheet in the oven and roast for 15 minutes.
- When the potatoes have roasted for 15 minutes, take them out of the oven but leave the oven on. Put the salmon fillets in the center of the baking sheet, skin-side down, and put the green beans on the empty side, arranging them in an even layer. (Nudge the potatoes all the way to one side as needed to make room.)
- Drizzle the salmon and green beans with 1 tablespoon of olive oil and the lemon juice. Sprinkle the salmon and green beans with 1 teaspoon salt, one or two grinds of black pepper, ½ teaspoon garlic powder, and the dill. Toss the green beans to coat them in the oil and seasonings. Rub the oil and seasonings into the salmon fillets. Lay the lemon slices on top of the salmon fillets.
- Put the baking sheet in the oven. Roast for 5 minutes, stir the green beans, then continue roasting for 5 to 10 minutes, until the salmon flakes easily with a fork. (By this point, the potatoes should be easy to pierce with a knife and the potatoes should be crisp-tender; if the potatoes still aren't tender enough, remove the green beans and salmon from the baking sheet and keep roasting the potatoes until they're done.)
- Remove the baking sheet from the oven. Divide the salmon, potatoes, and green beans among plates and serve hot.
